Stir-fried Squid and Pickled Mustard Green with Salted Black Bean

In Cantonese slang, “stir-frying squid” means getting fired from work. Despite its unlucky meaning, this is a popular home dish. With the salted black bean and pickled mustard green, this dish is appetizing!

Step by Step Instructions

Step 1
Rinse and clean the squid. Remove the skin and score the squid then cut into pieces. Marinate the squid with Chinese cooking wine and ginger juice for 10 minutes.

Step 2
Cut the bell pepper in pieces. Slice the pickled mustard

Step 3
In a dry pan, sauté the pickled mustard green with 1 tbsp Chinese cooking wine and 1 tbsp sugar. Set aside

Step 4
In a pot, bring the water to boil and slightly blanch the squid. Drain and set aside

Step 5
In a pan, add some oil on a medium high heat. Sauté the garlic, ginger and black bean until fragrant

Step 6
Add the pickled mustard green, squid, bell peppers and quick stir

Step 7
Add Chinese cooking wine, sugar, white pepper and green onion section. Stir well and ready to serv
