Step 1
Peel and slice the ginger, celery and carrot

Step 2
Slice the fish about 1” thick and marinate with Chinese cooking wine, minced ginger, salt and white pepper for 20 minutes

Step 3
In a pan, add some oil on a medium high heat. Sauté the ginger until fragrant

Step 4
Add the fish and slightly cook until golden brown. Transfer to the plate and set aside

Step 5
In another pan, add some oil on a medium high heat. Sauté the celery and carrot until tender

Step 6
Add the fish back and deglaze with Chinese cooking wine and black truffle paste
