Stir-fried Seafood over Fried Noodle

When winter comes our skin turn dry. Sometimes it is not enough if we just apply body lotion. We can add some ingredients that contains fluid replacement. Just like the carrot and Chinese celery we used in Stir-Fried Seafood over Fried Noodle. It also increase our intake of dietary fibres.

Step by Step Instructions

Step 1
Cut the onion, carrot and Chinese celery into pieces.

Step 2
Remove the string off the honey peas. Slice the red pepper.

Step 3
Cut the grouper and squid into pieces.

Step 4
In a bowl, marinate the seafood with Chinese cooking wine, salt and pepper for 5 minutes.

Step 5
In a pot, bring the water to boil and slightly scald the noodle until loose and rinse it through cold water. Drain and set aside.

Step 6
In a pan, add some oil on a high heat. Spread the noodle evenly and pan-fry until golden brown on one side about 5 minutes. Flip the noodle over and cook until golden brown and crispy on the other side. Transfer to the plate.

Step 7
In a pan, add some oil on a medium high heat. Sauté the garlic, shrimp, grouper, squid and sear it until golden brown and set aside.

Step 8
Add the onion, carrot, Chinese celery and cook until fragrant.

Step 9
Add the honey peas and chicken broth. Bring it to simmer then add the seafood back and cook for 2 minutes. Add the light soy sauce, sugar and sesame oil.

Step 10
Combine the thickening ingredients and add to the sauce. Cook until the sauce has thicken, add the red pepper and quick stir.

Step 11
Pour it over the noodle and ready to serve.
