Stir-fried Scallop with Black Fungus and Honey Pea

Step by Step Instructions

Step 1
Soak the black fungus until soft. Mince the garlic and set aside.

Step 2
Pat the scallops dry completely with kitchen paper. Add Chinese cooking wine, salt, ground white pepper and marinate for 10 minutes.

Step 3
Mix together oyster sauce, light soy sauce, sugar, sesame oil and water. Set aside.

Step 4
Bring a pot of water to boil. Add honey peas and blanch for 1 minute. Drain and set aside.

Step 5
In a pan, add some oil on medium heat. Add scallops and sear until golden brown on both sides. Transfer to a plate and set aside.

Step 6
In the same pan, add some oil on medium heat. Add garlic, ginger and sauté until fragrant. Add honey peas, black fungus, scallops and quick stir.

Step 7
Add the sauce and stir well. Transfer to the plate and ready to serve.
