Step 1
1. Remove cartilage ink sac from squid, wash and cut into pieces. Make cross silts (X) cut on the squid (but not cut through).

Step 2
2. Add Shaoxing wine and pepper, marinate squid pieces for 5 minutes. Blanch marinated squid pieces in boiling water, drain and set aside.

Step 3
Heat a wok over medium heat, add oil, sauté ginger, minced garlic, shredded red hot pepper and fermented bean curd, add Kai Lan and stir fry until soft.

Step 4
Add blanched squid pieces and stir-fry, add sugar to taste and serve.
