Stir-fried Grouper with Jasmine Tea

Jasmine tea combines the flavour of tea and the fragrance of jasmine flower. It matches well with grouper fish. Marinating the grouper fish with egg white gives a smoother texture.

Step by Step Instructions

Step 1
Cut the grouper into pieces. Slice the Chinese zucchini and carrot.

Step 2
Brew the jasmine tea leaves with hot water for 1 minute and separate the tea leaves from tea.

Step 3
Marinate the grouper with salt, corn starch and egg white for 5 minutes.

Step 4
In a pan, add some oil on medium heat and bring to boil. Add tea leaves and deep-fry on medium low heat until crispy. Transfer to a plate and reserve the oil.

Step 5
In another pan, add some oil on medium heat. Add grouper, reduce to medium low heat and sear until 80% cooked. Transfer to a plate and set aside.

Step 6
Mix together 80mL jasmine tea, salt and corn starch.

Step 7
In a pan, add some reserved oil on medium high heat. Add Chinese zucchini, carrot and sauté until softened. Season with some sugar.

Step 8
Add grouper, jasmine tea and tea leaves. Mix well and ready to serve.
