Stir-fried Eggplant in Thai Style

The ball-like Thai eggplants look very cute with a juicy texture. Stir fry with Thai basil and lime juice to gives a more appetizing flavor to the dish.

Step 1
Chop the garlic and red bird chili.

Step 2
Halve the eggplants, soak in salted water for 30 minutes and set aside.

Step 3
In a pan, add some oil on medium heat. Add garlic and sauté until fragrant.

Step 4
Add eggplants and stir-fry until fragrant. Add some water and bring to boil. Cover the lid and cook for 5 minutes or until soft.

Step 5
Add fish sauce, light soy sauce and brown sugar. Mix well.

Step 6
Add Thai basil, lime juice, red bird chili and mix well. Ready to serve.
