Stir-fried Clams with Tomato and Basil

Step by Step Instructions

Step 1
Thinly slice the onion and halve the cherry tomatoes. Soak the clams in salted cold water for 30 minutes to help release the sands. Rinse and set aside.

Step 2
Heat olive oil in frying pan over medium high heat. Add garlic and onion and stir-fry for 2 minutes.

Step 3
Add in cherry tomatoes and half of the basil and stir-fry for 2 minutes.

Step 4
Stir in tomato paste, light soy sauce, salt, black pepper and sugar. Mix well and add in clams.

Step 5
Stir-fry quickly for 1 minute and add in white wine. Let cook for another 3 minutes or until clams are opened and cooked.

Step 6
Turn off heat and add in the remaining half of the fresh basil, mix together. Serve immediately.
