Stir-fried Clams with Garlic and Black Bean Sauce

Garlic and Black Bean sauce is the perfect match of seasoning. The combination of clams and garlic black bean sauce can never bore one. If you are able to cop some of the fresh clams in the market, try following this recipe, I am sure this will give you a rich aftertaste.

Step by Step Instructions

Step 1
Soak the clams in salt water for 30 minutes to help release the sands. Drain and set aside.

Step 2
Rinse and soak the fermented black bean for 15 minutes.

Step 3
Mince the garlic, shallot and slice the red chili pepper.

Step 4
In a bowl, mix together the water, oyster sauce, light soy sauce, sugar and corn starch.

Step 5
In a pan, add some oil on a medium high heat. Sauté the shallot, garlic and fermented black bean until fragrant.

Step 6
Add the clams and cook for 2-3 minutes.

Step 7
Add the Chinese cooking wine, seasoning mixture and cook until the clams has open and the sauce has thickened.

Step 8
Add the red chili pepper and green onion section. Stir well and ready to serve.
