Stir-fried Chinese Yam with Black fungus and Celtuce

Step 1
Peel and cut the celtuce, Chinese yam into pieces. Soak the black fungus until soft, remove the stem and cut into pieces.

Step 2
Cut the red bell pepper into pieces and mince the garlic.

Step 3
Bring a pot of water to a boil. Add the white vinega. Blanch the Chinese yam and celtuce, drain and set aside.

Step 4
In a pan, add some oil and sauté the garlic until fragrant. Add the celtuce, Chinese yam and stir well.

Step 5
Add the black fungus, red bell pepper and mix together.

Step 6
Season with light soy sauce, salt and white pepper. Toss well and ready to serve.
