Step 1
Mince the garlic

Step 2
Peel and slice the ginger

Step 3
Wash and soak the fermented soy bean for 10 minutes, drain and set aside

Peel and slice the carrot

Remove the seed of the bitter melon and cut into slice

Cut the chicken tenderloin in pieces

Marinate with Chinese cooking wine, soy sauce, sugar, corn starch and white pepper for 15 minutes

In a pot, bring the water to boil, add some salt and blanch the bitter melon for a minutes, drain and set aside

In a pan, add some oil on a medium high heat. Sauté the garlic and ginger until fragrant

Add the chicken and cook about half way. Add the fermented soy bean and sauté until fragrant

Add the water and cook until the chicken is cooked

Add the bitter melon and carrot and cook for 3 minu

Season with sugar and drizzle with sesame oil
