Stewed Oyster with Ginger and Green Onion

Step 1
Cut the green onion into sections. Flatten the shallots and set aside.

Step 2
Rinse the oysters with corn starch and salt. Pat dry and set aside.

Step 3
Bring a pot of water to boil. Add oysters and blanch for 1 minute. Drain and pat dry completely. Coat with corn starch.

Step 4
In a pan, add some oil on medium heat. Add oysters and sear until golden brown on both sides.

Step 5
In the same pan, add some oil. Add ginger, 1/2 green onion and shallots. Sauté until fragrant. Add Chinese cooking wine and mix well. Add oyster sauce, light soy sauce, sugar, ground white pepper and water. Bring to boil.

Step 6
Add oysters and the remaining green onion. Mix well and cook until the sauce is thickened. Ready to serve.
