Steamed Prawn over Lotus Rice

Step 1
Soak the lotus leaf until soft and lay in the bamboo steamer

Step 2
In a mixing bowl, combine the seasoning ingredients together for later use

Step 3
In a shallow pan, add oil on a medium high heat. Sauté the dried shrimp until fragrant

Step 4
Add rice and Chinese cooking wine and cook for about 3-4 minutes

Step 5
Transfer to the lotus leaf and steam it for 30 minutes

Step 6
Remove the shell of the prawn but leave the tail and head on

Step 7
When the rice is ready, lay the prawn on the rice and pour the seasoning mixture and steam it for another 10 minutes

Step 8
Sprinkle with green onion and serve hot
