Steamed Lotus Leaf Wrapped Glutinous Rice in a Bucket

Glutinous rice is good for our health. It supports the spleen and stomach and hence warms the limbs. Wrapped with the lotus leaf, these glutinous rice has the aroma of the leaf, which makes it even more appetizing.

Step by Step Instructions

Step 1
Rinse and soak the glutinous rice overnight. Drain and set aside.

Step 2
Soak the lotus leaf until it soft then place it in the bucket.

Step 3
Soak the dried shrimp and roughly chop.

Step 4
Soak the mushroom until soft. Remove the stem and cut into small dice. Dice the Chinese sausage.

Step 5
In a pan, add some oil on a medium high heat. Sauté the garlic, Chinese sausage, dried shrimp and mushroom until fragrant.

Step 6
Add the Chinese cooking wine and glutinous rice and quick stir. Add half of the chicken broth and cook until the rice has absorbed the liquid.

Step 7
Add the remaining chicken broth, light soy sauce and cook until the rice has absorbed the liquid. Season with salt and white pepper.

Step 8
Transfer to the bucket, cover the rice with the lotus leaf and steam it for 30 minutes.

Step 9
In a pan, add some oil on a medium high heat. Add the prawn and scallop, season with salt, white pepper and sear until golden brown on both sides.

Step 10
Add the prawn and scallop in the glutinous rice and steam it for another 8-10 minutes.

Sprinkle with chopped green onion and cilantro. Ready to serve.
