Steamed Layers Red Dates Cakes

Step 1
Bring 300mL water to boil, add 50g rock sugar and red dates, cook for 15 minutes

Transfer to the mixing bowl then blend the mixture until combine

Strain the liquid and discard the lumps

Add 50g water chestnut flour

Whisk together then strain it through the strainer. Set aside

Prepare the coconut layer, bring 200mL water to boil with 50g rock sugar until the sugar is dissolved

Combine the coconut milk with the sugar syrup then add 50g water chestnut flour and whisk together

Strain the mixture through the strainer to discard the lumps and set aside

Brush the tin with oil and pour 1/2 of red dates mixture

steam for 8 minutes until set

Step 11
Then pour 1/2 of the coconut mixture and steam for another 8 minutes until set

Step 12
Repeat the step until finish all the mixture

Step 13
Let cool, remove the cake from the tin

Cut into pieces and serve
