Steamed Ginger Lemon Soufflé

With special spices, ginger and lemongrass, you can make this tasty soufflé. You can make it even without an oven!

Step by Step Instructions

Step 1
In a pot, add milk, lemon zest, ginger,lemongrass and bring to boil under low heat. Remove from heat, let cool and sieve. Set aside.

Step 2
Use a kitchen aid to blend the egg yolk and 40g sugar until creamy. Add lemon juice, all-purpose flour and mix well. Add the milk mixture and whisk together.

Step 3
Use a kitchen aid to blend 10g sugar and whipping cream together. Refrigerate and set aside.

Step 4
Use a kitchen aid to blend the egg white into a foam. Add theremaining sugar and beatuntil soft peak.

Step 5
Add the egg white slowly and mix well.

Step 6
Brush the butter on the ramekins. Sprinkle with the remaining sugar (to help removing the molds). Add the mixture until 80% full. Slightly shake to remove gas bubbles.

Step 7
Place the ramekins into steamer and steam for 25 minutes. Remove from the molds. Place the whipping cream on top. Sprinkle with powdered sugar and orange zest as garnish. Ready to serve.
