Steamed Fish Head with Tangy Plum Sauce

Step 1
Finely chop the garlic and ginger. Cut red chili and green onion into small pieces.

Step 2
Pit the pickled plum and press into puree. Add Chinese yellow bean paste, sugar, rice wine and chili, mix well.

Step 3
Rinse and pat dry the chopped fish head. Add bean paste mixture, garlic, ginger and marinate for 30 minutes.

Step 4
Bring a pot of water to boil, add tofu puff and cook for 3 minutes in order to remove the excess oil.

Step 5
Drain the tofu puff and cut into half.

Step 6
Place tofu puff on the steaming plate, top with chopped fish head with sauce and steam for 13 minutes. Sprinkle some green onion before serve. Enjoy!
