Steamed Eggplant Stuffed with Fish Paste and Pork

Step by Step Instructions

Step 1
Dice the green onions. Rinse and soak the dried shrimps. Mince the garlic and set aside.

Step 2
Rinse and pat dry the eggplants. Place the eggplant in between 1 pair of chopsticks. Slice into 1cm thick without cutting through. Flip over and place in between 1 pair of chopsticks. Slice it in 45angle into 1 cm thick.

Step 3
Mix together fish paste, minced pork, green onions, light soy sauce, sesame oil, salt, sugar, ground white pepper, corn starch until sticky.

Step 4
Stuff into the eggplant and place on the steam plate. Steam for 10-12 minutes until cooked.

Step 5
Mix together oyster sauce, light soy sauce, sesame oil, sugar and set aside.

Step 6
In a pan, add some oil on medium heat. Add garlic and sauté until fragrant. Add dried shrimps and sauté until fragrant.

Step 7
Add the sauce and bring to boil. Add corn starch solution and cook until sticky.

Step 8
Pour over the eggplant and ready to serve.
