Steamed Bun with Crab roe and Pork

Step by Step Instructions

Step 1
Microwave the milk and butter for 30 seconds until butter melted. Set aside.

Step 2
Sieve the bread flour, baking powder, yeast, sugar and salt. Set aside.

Step 3
Whisk together the flour mixture and warm milk (40-50°C) with a kitchen aid and form the dough.Knead the dough with hands for 20-30 minutes until smooth.Spread a layer of oil on a bowl. Place the dough in it, cover with towel and let it rest until the dough ferment to double size.

Step 4
Prepare the filling. In a pan, add some oil. Add the minced green onion, ginger and sauté until fragrant. Add the pork and crab roe until cooked. Season with Chinese cooking wine, soy sauce, sugar, rice vinegar and sesame oil. Cook until water evaporated. Transfer to a plate.

Step 5
Knead the dough to 1cm thick. Use mousse ring with 3.5” diameter to cut the dough into rounds. Spread a layer of oil on the surface.Fold the rounds in half. Roll the centre once. Place onto a plate, cover with towel and let it rest for 40-60 minutes.

Step 6
Steam the dough under high heat for 15-20 minutes.

Step 7
Spread some sweet soy sauce inside the buns. Fill the pork fillings into the buns. Garnish with cilantro, diced green onion, cherry radish slices and white sesame. Ready to serve.
