In a mixing bowl, combine ginger juice with vinegar, salt, oil, and sugar

Wash the spinach. Blanch in a pot of boiling water for 2 minutes

Transfer to a pot of cold water immediately

Drain completely dry

Transfer the spinach in a serving bowl. Top with ginger sauce. Garlic with minced ginger, sesame seeds, and a wolfberry (optional)
