Spinach with Dried Scallop and Enoki Mushroom

Eat more spinach in Spring to keep your liver healthy! Pour dried scallop and enoki mushroom over the cooked spinach to gives a richer flavor to the dish.

Step 1
Mince the garlic and halve the spinach. Rinse the enoki mushrooms, remove the stems and cut into sections. Soak the dried scallops until softened and shred.

Step 2
In a pan, add some oil on medium heat. Add 1/2 garlic and sauté until fragrant. Add spinach and stir-fry until softened.

Step 3
Add some salt and 1/4 tsp sugar to season. Transfer to a plate.

Step 4
In the same pan, add some oil on medium heat. Add the remaining garlic and sauté until. Add dried scallops, enoki mushrooms and stir-fry until fragrant.

Step 5
Add oyster sauce, light soy sauce, remaining sugar and water. Bring to boil.

Step 6
Add corn starch water and cook until thickened. Pour over the spinach and ready to serve.
