Spinach Tagliatelle with Creamy Tomato Sauce

Step 1
In a pot, bring the water to boil, sprinkle with salt and cook the pasta until al dente for about 8-10 minutes. Drain and set aside

Step 2
Mince the tomato and shallot

Step 3
In a pan, add olive oil and sauté the shallot until fragrant, then add the tomato and cook for 2 minutes. Lower the heat and let simmer the tomato until thick

In a pot, add white wine, white wine vinegar and bring it to boil, add heavy cream and reduce by half

Step 5
Add thyme, salt and pepper to the tomatoes

Step 6
Add the cream mixture and bring it to simmer. Add the butter and stir until incorporated

Add the pasta it the sauce and mix together

Sprinkle with parsley, fresh thyme and serve hot
