Defrost the spinach and squeeze off the excess water

Finely chop the onion

Dice the white mushrooms

In a pan, melt the butter and sauté the onion and mushroom until fragrant

Sprinkle with some salt and pepper to season

In a mixing bowl, whisk the eggs, milk, cheese, spinach, onion and mushrooms mixture

Add Italian seasoning, salt and pepper

Brush the baking dish with oil

Pour the mixture inside

Preheat the oven to 180°C, bake for 30-45 minutes until golden brown and set
