Spicy Stir-fried Lotus Root

Step 1
Peel and rinse the lotus root. Slice into 3mm thick. Peel and slice the ginger. Chop the green onion into sections and set aside.

Step 2
Bring a pot of water to boil and blanch the lotus root for 30 minutes.

Step 3
Heat some oil on high heat and sauté ginger, garlic and green onion until fragrant. Add Sichuan pepper, dried chilies and star anise and sauté for half minute.

Step 4
Drain the lotus root and add to the pan. Stir for a while and add light soy sauce, sugar, salt and water. Stir for 2 minutes until the sauce is thickened and coated on the lotus root. Remove from heat and add vinegar. Ready to serve.
