Spicy Sichuan Chicken is a classic dishe for the people who love to eat spicy, fry the chicken crispy, plus dual stimulation of pepper and chili, it is very delicious. While cooking at home, it might not have the fire like the professional kitchen stove, but it can also make a memory of the spicy flavor.

Step 1
Mince the garlic and shallot

Step 2
Cut the dried chili pepper and red bird chili in halves

Step 3
Cut the chicken thigh meat into small pieces

Step 4
Marinate with Chinese cooking wine, light soy sauce and sugar for 20 minutes

Step 5
Coat with the corn starch and mix well

Step 6
On a medium high heat, add enough oil for frying. Fry the chicken until golden brown, transfer to the kitchen paper and set aside

Step 7
In a pan, add some oil on a medium heat. Sauté the garlic and shallot until fragrant

Step 8
Add the Sichuan pepper, dried chili pepper and red bird chili

Step 9
Add the chicken back stir well

Step 10
Add the Chinese cooking wine and sugar. Toss well and ready to serve
