Spicy Shrimp with Coconut Rice Burrito

Step by Step Instructions

Step 1
Cut the mango in half and remove the flesh.

Step 2
Place the mango in the blender and blend until smooth.

Step 3
Whisk together the mayonnaise, mango, honey and refrigerate for an hour.

Step 4
In a bowl, combine the minced garlic, lime zest, lime juice, honey, olive oil, cayenne pepper, salt and black pepper.

Step 5
Add the shrimp and marinate for an hour.

Step 6
Rinse the rice and place in the rice cooker. Add the coconut milk, water and press start to cook the rice.

Step 7
In a pan, add some oil on a medium heat. Sear the shrimps about 2 minutes on each side until golden brown. Set aside.

Step 8
When the rice is done, add the chopped cilantro and mix well.

Step 9
Over the tortilla, spread the mango aioli, coconut rice, shrimp, tomato and drizzle more mango aioli.

Step 10
Roll up the tortilla and ready to serve.
