Spicy Dried Shrimp with Dual Eggplants

Step 1
Minced the garlic

Step 2
Cut the eggplants into medium sizes

Step 3
In a shallow pan, add oil enough for frying and cook the purple eggplants for about 1 minute then transfer to the plate and drain off the oil

In a pan, add oil on a medium heat. Sauté the garlic and dried shrimp until fragrant

Step 5
Add both eggplant and mix well

Step 6
Add sugar, chili paste, oyster sauce and sesame oil. Stir until the eggplants are coated with the sauce

Step 7
Pour the chicken broth and cook until the sauce is thicken for about 5 minutes

Step 8
Transfer to the plate and garnish with green onion
