Spicy Cucumbers Sichuan Style
Ingredients

Step 1
Peel the fresh cucumbers

Step 2
cut into 2-3cm length-wide pieces

Step 3
In a bowl, combine the cucumber with 1 tablespoon salt

Step 4
soak in cold water for about 90 minutes

Step 5
Drain dry and set aside

Step 6
Slice the red chili pepper

Step 7
Thinly shred the ginger

Step 8
Blanch the red chili peppers for 1-2 minutes,drain and set aside

In a wok, add oil, add shredded ginger, dried Sichuan red chili peppers, Sichuan peppercorn, saute until aromatic.

Add soy sauce, sugar, Chinese rice wine. Turn to high heat and simmer for 2-3 minutes.

Step 11
Transfer the prepared cucumbers. Drizzle the seasoning sauce on top. Mix well and ready to serve.
