Spicy Butter Prawns

Step by Step Instructions

Step 1
Rinse, peel and devein the prawns then pat dry with kitchen paper. Set aside.

Step 2
Melt 15g of unsalted European butter in a pan over medium heat. Sear the prawns until cooked through. Transfer to plate and set aside.

Step 3
In the same pan, melt the remaining butter over low heat. Add curry powder and stir until it melts in butter, add chilli and toss until fragrant. Turn up the heat to medium, add evaporate milk, fish sauce, sugar and bring to simmer.

Step 4
Return prawns into the pan, add Thai basil and toss with the sauce. Serve immediately.
