Spaghetti Grilled Vegetables with Homemade Pesto Sauce

Prepare the pesto sauce, place 1/3 of the olive in the blender with the remaining ingredients

Blend until smooth then add hte remaining of the oil and blend until incorporate, set aside

Slice the vegetable about 2cm thick, toss it with oil, salt, pepper and Italian seasoning

In a pan, sear the vegetable until golden brown and transfer to the baking pan

Add the cherry tomatoes together with vegetable. Preheat the oven to 180°C and bake it for 5 minutes

In a pot, bring the water to boil, sprinkle with salt and cook the pasta until al dente for about 8-10 minutes and drain

Add the pesto sauce and toss the pasta and mix together

Transfer to the serving plate and add the grilled vegetable on top
