Southern Taiwanese Meat Rice Dumpling

Step by Step Instructions

Step 1
Soak the bamboo leaves overnight.

Step 2
Soak the glutinous rice for at least 4 hours. Drain and set aside.

Step 3
Soak the dried mushrooms and dried shrimps until soft. Set aside and save 200mL water.

Step 4
Cut the pork belly and mushrooms into small pieces.

Step 5
In a pan, add half lard on high heat. Sauté the shrimps and mushrooms until fragrant. Add the pork and cook until golden brown. Add 30mL soy sauce, salt, sugar and cook until the sauce has thickened.

Step 6
Add the mushroom liquid, 30mL soy sauce and 1 tbsp white pepper. Stir-fry until the pork is cooked.

Step 7
Stir in half fried shallots and transfer into a bowl.

Step 8
In a pan, add the remaining lard on high heat. Add the glutinous rice, remaining soy sauce, white pepper, salt and sugar. Stir well and transfer into a bowl.

Step 9
Place the glutinous rice and the filling on the leaf. Fold into the pyramid shape. Tie and place in boiling water, cook for 2 hours until the glutinous rice is cooked.
