This appetizing dish is common to Chinese and everyone knows it. The mixed sour and spicy taste makes this shredded potatoes best companion of plain rice.

Step 1
Clean and peel the potatoes. Cut them to shreds. Put the shreds into cold water to remove starch on surface.

Step 2
Remove seeds in green chilies and cut them to slices

Step 3
Cut dried red chilies to pieces.

Step 4
Heat the pan with oil and add Sichuan pepper. Stir fry until you smell them. Take the peppers out.

Step 5
Add green Onion, Ginger fragments and dried red chilies. Stir fry all

Step 6
Add the shredded potatoes in, stir them well, add white vinegar and keep stirring for 1 minutes.

Step 7
Then add green chilies and salt, stir them again

Step 8
Add garlics fragments and chili oil in the end. Stir well and ready to serve.
