Peel the potato and cut them into thin strips.

Step 2
Place them in a bowl and soak to remove starch. Drain and set aside.

Cut the carrot into thin strips.

Heat the wok over high heat, add potatoes and carrots and stir-fry until soft.

Step 5
Add vinegar, and stir-fry until fully cooked

Step 6
Season with salt and sugar, pour in pepper oil and stir well before serving.
