Soft Chocolate Chip Cookies

If you love chocolate, then you cannot miss this soft and chewy American style cookies with chocolate chips!

Step by Step Instructions

Step 1
Preheat the oven to 180ºC. Place a sheet of parchment paper on a baking tray. Slightly cut the vanilla bean and scrap out the seeds. Set aside.

Step 2
In a bowl, add 454g chocolate, butter and vanilla seeds. Place in a double boiler until it melts. Let cool and set aside.

Step 3
Beat the eggs and brown sugar. Add sieved cake flour, baking soda, salt, instant coffee powder and mix well.

Step 4
Add the chocolate mixture, the remaining chocolate buttons, cashewsand mix well. Refrigerate for 6 hours until hardened.

Step 5
Use a 4cm scoop to scoop the dough out. Each piece is 3cm apart. Place on the tray and slightly press the dough. Bake for 13 minutes. Let cool and ready to serve.
