Soft Boiled Egg and Bacon Noodle Tart

Step 1
Cook the eggs in boiling water for 6 minutes. Cool down in ice water and remove the shells.

Step 2
Place into a zipper bag and add soy sauce, mirin, sugar and some water. Zip the bag, set aside overnight and halve the eggs.

Step 3
Preheat oven to 190°C. Cook the noodles in boiling water until done. Let cool in water.

Step 4
Add black pepper, soy sauce, sesame oil and sugar. Mix well.

Step 5
Brush some oil on a muffin tray. Divide the noodles into 6 portions and place into the tray. Bake for 20 minutes.

Step 6
Remove the tart crust from the tray. Place the seared bacon, cherry tomatoes and soft boiled eggs on top. Ready to serve.
