Smoked Salmon and Avocado Egg Benedict

Another important component of egg benedict, apart from a perfect poached egg, is the smooth hollandaise sauce. You can cook a delicious egg benedict at home as well!

Step by Step Instructions

Step 1
Halve the English muffin and slightly toast until crispy. Seed and slice the avocado.

Step 2
Prepare the hollandaise sauce. Microwave the butter until melted. Use a ladle to remove the foam and milk solids from the surface to make clarified butter.

Step 3
Whisk the egg yolks and lemon juice in a double boiler. Slowly add the hot melted butter and combine with the egg yolks until the sauce is thickened. Make sure the egg yolks are well combined with the butter before adding more butter.

Step 4
Season with salt and paprika.

Step 5
In a sieve, add the eggs to remove the extra egg white gently.

Step 6
Bring water to boil,add white vinegar and reduce to medium low heat on a simmer stage. Swirl the water with a spoon to create a gentle whirlpool effect. Add the egg slowly and cook for 3 minutes or until set.

Step 7
Layer smoked salmon, avocado and poached egg on top of the muffin. Drizzle hollandaise sauce over and ready to serve.
