Single Pot Vegetable Stew

Step by Step Instructions

Step 1
Peel and cut the carrots into medium sized pieces. Same for the celery and leek.

Step 2
In a large pot, heat up some water and blanch the kohlrabi for 2 minutes. Drain dry and allow to cool.

Step 3
In a large pot, heat up some olive oil. Add garlic to sauté until aromatic. Add the carrots, celery, and leek to cook for 3 minutes.

Step 4
Add the canned tomatoes, thyme, mixed dry herbs, and bay leafs, broth, water and beans. Bring to a boil, simmer for 30 minutes.

Step 5
Add the prepared green vegetables. Season with salt and pepper. Simmer for another 15 minutes. Ready to serve.
