Simple Mushroom Stew

Chinese mushrooms are delicious and nutritious. They are often dehydrated and preserved for a long period of time. Step by Step Instructions

Step 1
Wash the Chinese mushrroms. Then soak in water at least for a few hours before cooking. If the mushrooms are large (and thick), it is best to soak over night or even 2 nights. After soaking in water, remove the stems.

Step 2
Prepare the green onion, garlic.

Step 3
In a medium size pot, heat up a tablespoon of oil. Saute the green onions and garlic on medium high heat until aromatic, about 2 minutes.

Step 4
Add mushrooms and saute for a few minutes until browning begins, about 5 minutes.

Step 5
Add chicken soup, reduce heat and simmer for an hour.

Step 6
If the broth runs out during this process, add water to keep the mushroom at least half way covered by liquid.

Step 7
Finally, season the mushrooms. Add oyster sauce and salt to taste, then allow to simmer for another 20 minutes. Do not season until this final stage. Otherwise, the mushrooms can be too salty.
