Sichuan-style Shredded Chicken with Preserved Egg

It is a signature appetizer in Sichuan. The addition of preserved egg makes it even more flavourful. The dish goes well with rice or noodles.

Step 1
Dice cilantro, garlic, ginger and red chili. Peel the preserved egg and cut into pieces.

Step 2
Cook chicken breast in boiling water for 5 minutes. Leave it in the pot for 15 minutes.

Step 3
Take out the chicken breast and shred into pieces.

Step 4
Heat a frying pan using low heat. Add in white sesame and stir fry for 2 minutes.

Step 5
Mix cilantro, garlic, ginger, red chili, oyster sauce, white vinegar, sesame paste, Sichuan pepper oil, sesame oil and sugar to make the sauce.

Step 6
Put shredded chicken, preserved egg and white sesame in a bowl. Drizzle with the sauce. Mix well and ready to serve.
