Sichuan Style Mouth-Watering Chicken

Step 1
In a mixing bowl, dice the celery, 1 shallot, red chili, ginger and garlic

Step 2
Cut the preserved egg into small pieces, set aside

Step 3
Soak the rice noodle and cut into a desire size, set aside

Step 4
Add all the sauce in the mixing bowl with the chopped ingredients and mix well

Step 5
In another pot, bring the water to boil, add the ginger and garlic. On a medium high heat, cook the chicken for 30 minutes or until is fully cooked

Step 6
Place the chicken into an ice bath to cool down

Step 7
Place the rice paper on the plate and chopped the chicken and place above the rice paper

Step 8
Put the preserved egg on the side and pour the sauce mixture on the side of the rice noodle
