Sichuan Style Chilli Pot

Step by Step Instructions

Step 1
Cut lotus root and potato into slices. Chop cauliflower into small pieces.

Step 2
Slice the ginger and garlic, roughly chop the green onion and Chinese parsley.

Step 3
Bring a pot of water to boil, add lotus root, potato and cook for 3 minutes until slightly tender. Drain and set aside.

Step 4
In a pan over medium heat, pan sear the shrimp till fully cooked. Transfer to plate.

Step 5
With the same pan, sauté the garlic, ginger¡ASichuan dried chilli and green onion until fragrant.

Step 6
Return the shrimp and all the chopped ingredients into the pan. Add Sichuan chilli sauce and toss well.

Step 7
Pour in chicken stock and cook for 5 minutes.

Step 8
To finish off, add the chopped Chinese parsley, drizzle some Sichuan pepper oil and toss until well coated. Enjoy!
