It seems difficult to cook Sichuan Dan Dan noodles. In fact, we can also produce the authentic Sichuan flavour as the restaurants do at home with this recipe!

Step by Step Instructions

Step 1
Mince the hot pickled mustard, garlic, shallots and green onions.

Step 2
Bring some water to boil. Add Guan Miao Noodles and cook until al dente. Transfer to cold water, drain and set aside.

Step 3
Mix together sesame paste, chili bean paste, soy sauce paste, Sichuan pepper oil, sesame oil, black rice vinegar, sugar and set aside.

Step 4
In a pan, add some oil on medium heat. Add garlic, shallots, ginger and sauté until fragrant.

Step 5
Add minced pork, dried small shrimps and hot pickled mustard. Stir fry until the pork is done.

Step 6
Add chicken broth, water and bring to boil. Add sauce, mix well and bring to boil again.

Step 7
Pour the soup on top of the noodles. Sprinkle with peanuts and green onions. Ready to serve.
