Sichuan Bon Bon Chicken with Spicy Sesame Sauce

Bon bon chicken is a very popular dish in Sichuan. Its name comes from the manner in which the meat is tenderized using a stick to hit.

Step 1
Slice the ginger and cut the green in section

Step 2
In a pot, bring the water to boil. Add the chicken leg, ginger, green onion, Chinese cooking wine and cook for 8 minutes

Step 3
Turn off the heat. Cover with the lid and let it sit for 15 minutes or until the chicken is fully cooked

Step 4
Let cool and use the rolling pin, slightly pound and shred the chicken and remove the bone

Step 5
In a pan, add the chili oil on a medium heat. Sauté the Sichuan pepper until fragrant

Step 6
Mix with the chili flakes,sweet soy sauce, black vinegar, sesame paste, some hot water, minced garlic and mix well

Step 7
Mix together the sauce and the chicken, sprinkle with green onion and white sesame seeds. Ready to serve
