Shredded Chicken and Sheet Noodles in Wasabi Sauce

Apart from the common rice balls and sandwiches, there are many other choices for picnic food. The golden 1:3 ratio of wasabi and Japanese mayonnaise gives this shredded chicken a mild spicy flavour. Easy to make and colourful. There is no doubt that it will be very popular among your friends.

Step 1
1. In a pot, bring water to boil. Add sheet noodles and cook for 2-3 minutes or until transparent. Rinse undercold water. Drain and set aside.

Step 2
2. In a pot, bring water to boil again. Add chicken thigh meat, salt and ginger. Cook until the chicken is done. Drain, let cool and shred.

Step 3
3. Mix together jelly fish, black rice vinegar, light soy sauce and sesame oil. Set aside.

Step 4
4. Mix together Japanese mayonnaise, wasabi and salt. Set aside.

Step 5
5. Mix together shredded chicken, sheet noodles, crab-flavoured sticks, cucumber, ham, jellyfish, crab roe and wasabi mayonnaise sauce. Ready to serve.
