Shanghainese Smoked Fish

Step by Step Instructions

Step 1
If using a whole fish, cut a 2cm thick slice from the area with less bones

Step 2
Add Chinese cooking wine, dark soy sauce, half of the green onions and ginger, mix well to marinate. Then add salt and mix again. Marinate for 15 minutes

Step 3
Prepare the smoke fish sauce. Heat up some oil on high heat, add the remaining green onions and ginger to saute until aromatic, add red chilies and star anise then saute quickly

Step 4
Add Chinese cooking wine and some water, add 2 tablespoons dark soy sauce, five spice powder, sugar, and salt. Mix again. Bring to a boil then remove from heat

Step 5
In a saute pan, add some corn oil on high heat, add the fish to pan fry until golden, remove the fish,

Then soak the fillet into the sauce.
