Shanghainese Fried Noodles

Few people in Shanghai know about this dish as it is not the real traditional fried noodle of Shanghai; instead, it is well-received outside Shanghai. During the 1950s, many Shanghainese moved to Hong Kong, and with them, they brought along the Shanghai food. As people in Hong Kong do not fancy deep fried food; which Shanghainese food have in abundance, the Shanghainese did some adjustment and created the Shanghainese Fried Noodles to suit the Hongkongers. Today, Shanghainese fried noodle has become symbol of Shanghai food in Hong Kong.

Step by Step Instructions

Step 1
Cabbage, Noodles, Garlic, Green Onions

Step 2
Pork

Boil water in a pot first (about 500ml)

Step 4
pour in the thick rice noodles to remove the excess oil

Step 5
Drain and set aside

Step 6
Cut the lettuce

Step 7
Add garlic and sauté until aromatic,add pork and sauté until half cooked

Step 8
Add shredded cabbage and sauté until cabbage begins to soften

Step 9
Add thick noodles

Step 10
Add sauce

Step 11
Mix thoroughly until all ingredients are dark brown in color. Keep frying until noodles are fully cooked

Serve hot
