Step 1
Remove the stems of the mushrooms and score a cross on the mushrooms.

Step 2
Boil water in a pot, add 4 grams of salt, mushrooms and blanch for 3 minutes, take out.

Step 3
Prepare another pot of water, add 2 grams of salt and oil to boil, add the Shanghai white cabbage, blanch for 2 minutes, take it out and place it on a plate.

Heat oil in a sauté pan, add oyster sauce, light soy sauce, dark soy sauce, sugar, salt and water.

Add the blanched mushrooms, stir-fry evenly, add cornstarch water and drizzle with oil before serving.
