Seared Shio Koji Miso Salmon Over Rice

Replacing salt with Shio Koji to marinate salmon adds a bitter-sweet flavor. With the Japanese pickled radish and the cooked salmon, a nice Japanese dinner is done.

Salmon Marinade
Step by Step Instructions

Step 1
In a bowl, whisk together the shio koji, white miso and mirin.

Step 2
Marinate the salmon with the shio koji mixture.

Step 3
Refrigerate for 3 hours.

Step 4
Wipe off the marinade.

Step 5
In a pan, add some oil on a medium heat. Sear the salmon until golden brown on both sides.

Step 6
Serve the salmon with the rice and takuwan.
