Seared Scallops with Mango Salsa

Mango Salsa
Step by Step Instructions

Step 1
For the salsa, chop and dice all the above ingredients, except for the limes, and toss them into a big bowl.

Step 2
Zest the limes and juice them to get the lime juice. Mix into the salsa and season with honey, salt and black pepper. Mix everything together and let the salsa sit for at least 30 minutes so all the flavours come together. (the longer this salsa marinates, the better it will taste).

Step 3
Heat up a saute pan and add some olive oil. Pat the scallop dry and season with salt. Once the pan is hot, seared the scallops on both sides until golden brown.

Step 4
Place the scallop on serving platter and spoon the mango salsa on top of the scallop.

Ready to serve
