Seared Scallop with Butter Lemon Almond Sauce

Step 1
In a pan on a medium high heat, add some oil and the scallop.

Step 2
Sprinkle some salt and white pepper, flip the scallop over then remove from the heat. Remove the leaf from the parsley, discard the stem and chop.

Step 3
In a dry pan, toast the almond until slightly golden brown and set aside. In the same pan, add the butter and caramelize. Turn off the heat and add the toasted almond and juice one lemon.

Step 4
Turn the heat back and cook until the sauce has thicken. Add 2/3 chopped parsley. Set aside.

Step 5
Remove the skin of the other lemon and segment.

Step 6
Place the arugula on the plate, add the scallop and lemon segment over.

Step 7
Spoon the sauce over the scallop, sprinkle the remaining chopped parsley for garnish. Ready to serve.
